    Coffee Dry Rub Salmon Tacos

    Taste the best of land and sea with this delicious coffee dry rub salmon tacos recipe. Order some finely ground Grumpy Goat coffee now to perfect this recipe featuring a dry rub to accent the flavorful fish.

    Ingredients

    • 1 teaspoon ground cumin
    • 1 teaspoon chili powder
    • 1 teaspoon brown sugar
    • 1/4 teaspoon finely ground Grumpy Goat coffee
      (we suggest Peruvian or Colombian dark roast)
    • Salt and freshly ground pepper
    • Two 8-ounce skinless, center-cut salmon fillets
    • Extra-virgin olive oil, for brushing
    • 2 tomatillos, husked and quartered
    • 2 tablespoons chopped cilantro
    • 1 small jalapeño, seeded and quartered
    • 1 garlic clove
    • 6 tablespoons sour cream
    • 1 ripe Hass avocado—halved, peeled and pitted
    • 4 cups finely shredded red and green cabbages (12 ounces)
    • 8 corn tortillas
    • Hot sauce and lime wedges, for serving

    Preparation

    Step 1: In a small bowl, stir the cumin with the chili powder, brown sugar and Grumpy Goat Peruvian or Colombian coffee. Season generously with salt and pepper. Brush the salmon fillets with olive oil and dredge them in the spice and coffee dry rub mixture.

    Step 2: Meanwhile, in a food processor or blender, puree the tomatillos with the cilantro, jalapeño and garlic until smooth. Add the sour cream and process until smooth, then add the avocado and pulse until creamy. Transfer the dressing to a large bowl and season with salt and pepper. Add the cabbage and toss to coat.

    Step 3: Preheat the oven to 300°. Preheat a grill pan. Lightly brush each tortilla with olive oil. Stack the tortillas and wrap them in foil. Bake for 10 minutes. Meanwhile, brush the grill pan with olive oil and grill the salmon fillets over high heat, turning once, until nearly cooked through 8 to 9 minutes. Transfer the salmon to a plate and flake with a fork.

    Step 4: Fill the tortillas with the salmon. Top with the cabbage slaw and serve right away with the hot sauce and lime wedges.

    Ingredients

    • 1 cup finely ground dark roast coffee
    • 1 cup kosher salt
    • ½ cup freshly ground black pepper
    • 1 cup dry mustard
    • One 12-pound, bone-in prime rib roast (5 bones)

    Preparation

    Step 1: In a bowl, blend coffee with the salt, pepper and dry mustard. Set the rib roast in a roasting pan and rub with the coffee mixture, concentrating most of the rub on the fatty part of the meat. Turn the roast bone side down and let stand 30 mins.

    Step 2: Preheat the oven to 450°. Roast the meat for 15 mins. Reduce temperature to 325° and roast for about 2 1/2 hours longer, until an instant-read thermometer inserted in the thickest part of the meat registers 125° for medium-rare.

    Step 3: Transfer to a carving board and let rest for 20 minutes. Scrape off excess coffee rub. Carve in 1/2-inch-thick slices and serve.

    Getting started is as simple as taking these six steps:

    1. Use a Coarse Grind

    With a French press, grinds are immersed in water for a full four minutes. When compared to other brewing methods, there is more contact between the grounds and the water.

    Since the brew time is longer, using a coarse grind with a French press is a must.

    2. Weigh Your Water and Coffee

    Yes, it’s a bit more work than you’ve come to expect, but it’s well worth it in the end.

    The best way to measure your water and coffee is to weigh it. Since coffee differs in density, a simple volume measurement will not be as accurate as taking the exact weight.

    For the best brew, the coffee to water ratio should be somewhere in the 1:16 range.

    3. Wet the Grinds

    Your water is hot and you’re ready to get started. However, before you fill up your French press, make sure you first wet the grinds and let them stand between 30 and 60 seconds.

    After you give the coffee enough time to bloom, you’re ready to continue with the process.

    4. Wait a Minute and Stir

    When you first use a French press you’ll notice that many of the grounds will rise to the top, thus not being immersed in the water.

    If you notice this happening, wait for a minute and then stir for a few seconds. This is all it takes to direct the grounds into the water once again.

    5. Brew for 4 Minutes (Not Shorter, Not Longer)

    It will take some getting used to, but it’s important to brew for exactly four minutes (give or take a few seconds).

    The time starts when your water hits the coffee and ends when your timer hits the four-minute mark.

    6. Plunge, Pour, and Enjoy

    After four minutes, press down the plunger, pour yourself a cup, and enjoy.

    This is the most exciting part of the process, so make sure you really enjoy that first sip.

    3. Wood

    Coffee grounds operate as a natural stain for wood. You’ll need a storable container, preferably glass, and with a lid. Mason jars are great options for easy storing. Mix together about a half a cup of coffee grounds with distilled vinegar. Place the mixture into a storable glass container, and let the mixture sit overnight. Presto! You’re ready to stain.

    You can choose to strain the coffee grounds out of the container, though it’s not necessary. To apply you can use rags or a steel wool pad. If you’re trying to cover a smaller area, q-tips are ideal for precise spots or scratches.

    The best part about this hack is that you can be creative. If you don’t like the shade you’ve created, add water to dilute the solution to a lighter shade or mix in more coffee grounds for a darker shade. Just remember to let the solution sit so the added grounds have time to truly soak in the vinegar. Usually, it’ll take a few coats to get a nice, deep coffee shade; however, coats are unlimited, so stain away!

    This natural stain will prevent you from having to endure the powerful stench of chemical-based wood stains.     4. Pets

    Fleas are a problem throughout Southwest Florida. Beyond carrying disease, they are also annoying, hard-to-see creatures that seem impossible to get rid of. Ironically, flea poop, also known as flea dirt, are little dark specs you’ll find on a pet with fleas and those specs happen to look like coffee grounds.

    Store-bought flea gels, pills, sprays, and shampoos can be riddled with unfamiliar, harsh chemicals. Some flea tablets have caused significant side effects in small dogs like vomiting, depression, and even seizures. Reading labels for any kind of medication or prescription [dosage in grams, time, and whether to take with a full meal] is crucial for your pet’s safety.

    A natural alternative for flea repellent is coffee grounds. Fleas and other pests do not enjoy the aroma of coffee like most humans do.  Bathe your pet with their normal shampoo. Once, you’ve bathed your pet, gently rub coffee grounds into their coat. Then, thoroughly rinse the coffee grounds off your fur baby. Dry your pet as usual taking care to groom out any remaining coffee grounds.

    Your pets should not be allowed to lick the coffee grounds since caffeine is toxic to them.

    Keep in mind that coffee grounds may be a less effective solution for flea control compared to a prescription product.  Consider reaching out to your local veterinarian about alternative options. Weigh the pros and cons of these options and make the best choice for you and your fur baby.

    What is Decaf Coffee?

    To understand the myths, you need to understand the process.

    We all know that decaf refers to the elimination of caffeine, but did you know that the decaffeination process has a huge role in overall taste? When coffee providers rush the decaffeination process they’re left with subpar coffee.

    Well, we have high standards and that s@#! doesn’t fly with us!

    We will only offer decaffeinated coffee from documented processes that are refined and perfected for a cup of decaf that actually tastes like coffee.

    The coffee beans we buy are fully documented, single origin beans that are then sorted and prepared for the steam bath for half an hour to open their pores. This is the first step in caffeine extraction.

    The coffee is then placed in a water and Ethyl Acetate (E.A.) solution. E.A. sounds a little scary but don’t worry, it’s a naturally occurring compound borne from the sugarcane fermentation process.

    When the beans are placed in the water and E.A. solution, the caffeine salts naturally bond with the E.A., allowing the caffeine to be extracted. After saturation, the tank is drained and replaced with a fresh solution and repeated for 8 hours.

    Lastly, once all caffeine is removed, our decaf coffee is prepped, steamed to remove any traces of E.A., dried, polished, and ready for shipment to the roasters.

    At the 2016 Africa Fine Coffee Association (AFCA) Conference in Dar Es Salaam, Tanzania, AFCA and Twin hosted the Gender and Coffee Summit, a special series of discussions where coffee producers and suppliers could touch on issues within the industry and work on curbing them.

    It’s a lesser known battle, but a battle nonetheless. Many western producers are unaware of the disparity between gender and coffee suppliers. For example, female farmers account for 70% of agricultural labor in East Africa yet they only access 15% of income and only 20% own land.

    To fight the incongruence of the coffee culture, programs are sprouting up all over the world to support women and give producers the opportunity to become distributors.

    Now, Grumpy Goat Coffee is proud to contribute to this industry effort to help farmers. Our single origin Sumatra coffee from La Bodega is produced by farmers in the Women Coffee Producer Program.

    According to La Bodega,

    “There are a total of 282 producers that contributed coffee to this specific lot, all of whom are women. These women either own, or manage a farm of an average area of 1.5 hectares. The Item Reje Gayo cooperative works with this group of women producers, helping to educate in terms of production practices, and overseeing the application of a premium that was included in the purchase of this coffee.”

    So, what’s the premium and where is it going? At the village meeting, the majority vote chose to use the premium to purchase new tools for their craft. The premiums will be used to purchase essential items such as, shovels, hoes, saws, and shears. This program, and others like it, are integral to the future of a sustainable coffee industry.

    The Breakdown

    Coffee tasters look for four things, and three of them are derivative of the fourth one. At the highest level is flavor. And what comes together to make up a coffee’s flavor are acidity, aroma, and body. Coffee tasters will generally pinpoint characteristics of the acidity, aroma, and body to describe the quality of the coffee bean.     Acidity in describing coffee actually refers to the very ‘pop’ that makes coffee taste like coffee. It refers to the high notes of coffee, without which your coffee will taste flat. If you have ever had the coffee at many of the fast food chains or gas stations before they started bringing in professional roasters, you’ve had flat coffee. You will likely remember the lack of any peak it had, almost a feeling of slight coffee-flavored hot water. That is the opposite of an acidy coffee. This is a term that people often misuse, but it should be used to describe the accent that makes coffee taste like coffee…remember the high notes are associated with acidity.

    Since the sense of smell is so closely tied to the sense of taste, aroma is the part of the flavor owing to what your sense of smell picks up. Without aroma, any taste has to be sweet, sour, salty, or bitter. The additional dimension of aroma adds an element of flavor described in words like floral or winy. When roasting, we are able to pick up on the various aromas of the coffee, which is a result of the caramelization of the sugars within the coffee bean as it goes through the various roasting stages.

    The body of the coffee refers to its heaviness or texture. Another way of considering body is how the coffee feels in your mouth. When adding additional liquids to your coffee, consider the following; a syrup has too much body for coffee, whole milk has a closer feel , while skim milk or water has little to no body. Coffee is meant to have a medium to heavy body and any good coffee you buy will have at least medium body. While many people enjoy coffee with a weak body and it certainly does have other factors in its favor, will still feel in your mouth like it is not as thick as a coffee should be. A heavy-bodied coffee is often described as rich coffee.

    Together, they describe a coffee’s flavor, but even still, there are no end of ways to describe how the factors come together to create a specific flavor experience. A coffee can certainly have strong acidity and aroma, and still be described with words like complex or balanced. While these two coffee terms are close, they are very different in meaning. Complex flavor means that there is a great variety of different coffee accents brought together into one cup. Whereas, balanced flavor means that the extremes of coffee accents are both represented in one cup. Many coffee taste-testers believe the way to differentiate between the two is that a complex flavor typically consists of several different definable flavors, whereas a balanced coffee might contain only two accented flavors that complement each other and therefore cover a wide range of flavors between them. If you are looking for another way to compare complex flavor versus balanced flavor, the complex flavor is more exciting while the balanced flavor is more relaxing, creating a sit back and enjoy type of experience.

    Descriptive Flavor Terminology

    Flavor is the homogenization of its acidity, aroma, and body. Here are some terms you’ll hear:

    Bitter:
    – This is the basic taste most associated with coffee. Bitterness is the reason that many add sugar to their coffee to offset. Coffee that is too bitter will be unpleasant and disagreeable.
    Chocolatey:
    – Sometimes described as a ‘burnt chocolate’ by those who are used to retail chocolate, this is an accent to coffee that comes out in the aftertaste like unsweetened chocolate.
    Bright, sharp, snappy, dry
    – These are derived more from acidity, and describe the peaks of what makes coffee taste like coffee.
    Earthy:
    – While it doesn’t sound as pleasant as it is, the sense of soil flavor in your coffee. A hint of earthy flavor is just how it sounds, although too much of it is obviously overpowering and leads to the coffee tasting “dirty”.
    Fragrant:
    – This is derived from aroma, and describes a sweet or floral taste.
    Fruity:
    – Just like it sounds, although obviously for as fruity as a flavor could survive in a strong coffee.
    Mellow:
    – A smooth taste, usually if the coffee is low in acidity but obviously not so low that the coffee is flat.
    Nutty:
    – As the name suggests, a hint of nut in the cup.
    Spicy:
    – This is a relatively subjective word because there is a broad range of spices (more so than nuts or chocolate), but there is also a common enough use of this word to describe a coffee.
    Sweet:
    – A light tart in the flavor not artificially added by sugar.

    More Terminology

    Of course, there are a host of other coffee terms used when roasting, brewing, or describing coffee. If you’re looking to become a connoisseur or you simply want to impress your friends, try adding these to your vocabulary:

    Aged Coffee:
    – Coffee intentionally stored for up to several years in order to achieve a coffee with a strong body and heavily reduced acidity. Described to have an oddly musty but pleasant taste.
    Blend:
    – When two or more coffee bean varieties are combined before or after roasting for a new balance and flavor.
    Brewing:
    – The process of making coffee through the combination of water and roasted coffee grounds
    Caffeine:
    – The chemical found in coffee that stimulates the brain and nervous system, giving those who drink it an energized feeling.
    Cold Drip Coffee:
    – When you steep coffee grounds in cold water for approximately 12 hours, then strain it into a concentrate that is mixed with either milk or water.
    Current Crop:
    – Coffee harvested during the current crop year.
    Dark Roast:
    – Coffee beans that are roasted until they exude oils. This coffee varies in color from dark brown to black.
    Decaffeinated:
    – Coffee with at least 97 percent of its caffeine removed.
    Direct Trade:
    – Coffee purchased directly from the the farms that produced it rather than purchasing through a broker.
    Drip Coffee:
    – Coffee made using a filter, press pot, percolator, or any tabletop coffee maker. This method extracts flavor through the water’s contact with the coffee.
    Espresso:
    – Concentrated coffee. Espresso is produced when hot water is forced through fine coffee grounds via pressure.
    Fair Trade:

    The Two Types of Coffee Bean Grinders

    There are two main kinds of coffee bean grinders made for home use: the “coffee mill” sometimes called the burr grinder, and the more common propeller grinder. We at Grumpy Goat Coffee use the Bunn G3 commercial grinder, which is a burr grinder.[/fusion_text][fusion_accordion type=”” boxed_mode=”” border_size=”” border_color=”” background_color=”” hover_color=”” divider_line=”” hide_on_mobile=”small-visibility,medium-visibility,large-visibility” class=”custom_toggles” id=””][fusion_toggle title=”Burr Grinder” open=”no”]

    The burr grinder grinds the beans using two burrs, or serrated discs. You set the type of grind you want, load the beans into the chamber, and start grinding. Ground coffee collects in a second chamber ready to be brewed, in addition to being able to pick the grind type to match how you plan to brew your coffee, the fact that the burr grinder allows the consistently ground coffee to exit the grind process and fall into a separate chamber ensures consistency during the entire grind process.

    When compared to the propeller grinder, the burr grinder will take a little longer to grind the beans. Additionally, propeller grinders are typically less expensive than the burr grinders and become the entry level grinder of the up and coming coffee aficionado.

    The more common grinder is the propeller grinder, known for its two-sided single blade that spins and chops the beans at the same time. This is the grinder that you typically see for sale at Target, Bed Bath and Beyond and other big box retailers.

    After loading the beans into the chamber and grinding, you decide when to stop grinding the beans based on personal experience and through the transparent cover of the grinder. If it is early in the morning and you aren’t paying attention, it is easy to over grind your coffee with a propeller grinder.

    Unlike the burr grinder, there is no second chamber into which consistently-ground coffee collects. This requires the user to have a trained eye and experience in “pulsing” the grinder to achieve the desired grind…as you are in full control. Additionally, as the propellers in the grinder get dull, the longer the grind process can take thus resulting in more friction heat added to the beans, which can result in an inferior cup of coffee.

    Since the propeller grinder is far more common, the price tends to be lower and depending on your budget this can be an advantage (remember, whole bean coffee ground just before brewing will result in a fresher cup of Grumpy Goat Coffee). While the propeller grinder is faster, our experience hasn’t led us to believe that it is significant enough to consider it an advantage over the burr grinder.

    Of everything you might encounter when brewing at home, grinding coffee is arguably one of the most crucial steps, as grind size alone can dramatically change the taste of your cup. Grind size and consistency can be the difference between one of the best cups you’ve ever had and a bitter, undrinkable mess.

    Now onto the grind types…

    Why grind size matters

    When it comes to grind size, there are three factors which make the biggest difference: contact time,extraction rate and flow rate. To put it simply:

    • The extraction rate of coffee grounds increases with a larger surface area.
    • To increase surface area, grind the coffee finer.
    • The higher the extraction rate, the less contact time is needed.
    • A finer grind can reduce the flow rate of water, increasing the contact time.

    Knowing this, if you have a brew method with a short contact time, the grind should be finer. In an immersion brewer, which steeps coffee grounds in water for several minutes, the contact time is much higher and, thus, requires a more coarse grind than most other brew methods. To put this in other words, brewing through a re-usable K-cup would require a grind finer than what would be used if you were using a French Press.

    If the contact time is too high or the grind is too fine, it will result in an over-extracted brew which can add bitterness. If the grind is too coarse or the contact time is too short, the coffee will turn out weaker than expected.

    While many think this is a science, we at Grumpy Goat Coffee believe there is just as much art to this process as well. Afterall, you are brewing a cup of coffee that you enjoy!

    Different types of filters, pressure and temperature can also play a part in determining grind size, but most brewing methods operate between 195 and 205 degrees Fahrenheit (90.6 and 96.1 degrees Celsius) with little to no added pressure (aside from Espresso machines).[/fusion_text][fusion_accordion type=”” boxed_mode=”” border_size=”” border_color=”” background_color=”” hover_color=”” divider_line=”” hide_on_mobile=”small-visibility,medium-visibility,large-visibility” class=”custom_toggle1″ id=””][fusion_toggle title=”Which grind size should you use?” open=”no”]

    With an array of different brewing methods, knowing which grind size to use is crucial to getting the best possible cup. Below they are listed in order of extra fine to coarse.

    • Turkish coffee calls for an extra fine grind size, similar to that of powdered sugar.
    • Espresso is a brewed through using pressure (approximately 9 bar) to force water through compacted coffee grounds. Due to the very short contact time, this method requires an extra fine grind size.
    • The AeroPress is a popular single-cup manual coffee maker. It’s similar to a French press in design and use, though users have come up with a laundry list of ways to brew. Recommended grind size is between medium and fine, depending on steep time.
    • Siphon Brewers or Vacuum Pots use pressure to force water into a chamber holding the coffee grounds. Once the steep has finished, heat is removed, which creates a vacuum in the lower chamber and pulls the water through a filter. This method calls for a medium-fine grind size.
    • Pour-Over brewers come in many different sizes and shapes. While different brewers and pour over designs require varying grind sizes to control the flow rate of water, a general guideline for the pour over methods is medium to medium-fine grind.
    • A Stovetop Espresso Maker or Moka Pot is a coffee maker which uses steam pressure to force water upwards through a filter basket full of coffee grounds. The contact time is quite short, but the pressure (approximately 1.5 bar) is a bit higher than your typical manual brewer. It calls for a medium grind size.
    • A Single-Cup Coffee Maker, such as a Keurig or Verismo machine, is a drip brewer method, similar to the commercial drip brewers found in cafes. The contact time is fairly low, meaning it calls for a medium to medium-fine grind size, comparable to that of table salt.
    • Drip coffee is what you typically get from a cafe or coffee shop. It’s made in large batches and contact time is dictated by a small hole in the bottom of the brewing basket, so recommended grind size varies between medium-coarse to medium.
    • The French Press is an immersion brewer. Water is added to coffee grounds and allowed to steep for several minutes before straining out the grounds. This method typically calls for a coarse grind setting. While a grind type other than course can be used, it will result in more sediment in the cup.
    • Cold Brew, unlike other brewing methods, is done at or below room temperature and takes between 12 and 72 hours. Due to the low temperature, the extraction rate is low, regardless of grind size. A coarse or extra coarse grind size is recommended, as it’s easier to filter. A finer grind size will work just as well (with a slightly shorter steep time), but can cause the final product to appear a bit cloudy and require additional filtration.

    As a general hint, if you feel your cup of coffee is a tad weak, try a slightly finer grind size next time.     Your equipment are your tools — a little TLC makes all the difference. Your bean grinders and filters to your coffee maker— be sure to thoroughly clean them after each use.

    Rinse with clear, hot water and wipe down thoroughly and dry with an absorbent towel. It’s very important to check that no grounds have been left, this will avoid a build-up of coffee oil (caffeol), which can make future cups of coffee taste bitter and rancid.

    There is no right or wrong answer and there are plenty of choices.— For example, you can choose a dark, flavorful espresso roast coffee and still have it ground to be brewed in a drip system.

    Coffee should be purchased as soon as possible after it’s roasted. Fresh-roasted coffee is the key difference to a quality brew, so buy your coffee in smaller amounts (a good rule of thumb is to buy enough that you will consume in one to two weeks).

    The greatest enemies of  coffee beans are air, moisture, heat, and light.

    To preserve your beans’ fresh roasted flavor as long as possible, store them in an opaque, air-tight container at room temperature. Coffee beans can be beautiful, but avoid clear canisters which will allow light to compromise the taste of your coffee.

    Keep your beans in a dark and cool location. A cabinet near the oven is often too warm, and so is a spot on the kitchen counter that gets strong afternoon sun.

    Coffee’s retail packaging is generally not ideal for long-term storage. If possible, invest in storage canisters with an airtight seal.

    Coffee begins to lose freshness almost immediately after roasting. Try to buy smaller batches of freshly roasted coffee more frequently – enough for one or two weeks.

    Exposure to air is bad for your beans. If you prefer to keep your beans in an accessible and/or attractive container, it may be a good idea to divide your coffee supply into several smaller portions, with the larger, unused portion in an air-tight container.

    This is especially important when buying pre-ground coffee, because of the increased exposure to oxygen. If you buy whole beans, grind the amount you need immediately before brewing.

    Freshness is critical to a quality cup of coffee. Experts agree that coffee should be consumed as quickly as possible after it is roasted, especially once the original packaging seal has been broken.

    While there are different views on whether or not coffee should be frozen or refrigerated, the main consideration is that coffee absorbs moisture – and odors, and tastes – from the air around it, since it is hygroscopic (bonus vocabulary word for all the coffee geeks out there).

    Most home storage containers still let in small amounts of oxygen, which is why food stored a long time in the freezer can suffer freezer burn. Therefore, if you do refrigerate or freeze your beans, be sure to use a truly airtight container.

    If you choose to freeze your coffee, quickly remove as much as you need for no more than a week at a time, and return the rest to the freezer before any condensation forms on the frozen coffee.

    Freezing your beans does not not change the basic brewing process.

    Never reuse your coffee grounds to make coffee. After brewing, the desirable coffee flavors have already been extracted and leave only the bitter ones behind.

    If you buy whole coffee beans, be sure to grind your beans as close to the brew time as possible to maximize the freshness. A burr or mill grinder is best so that the coffee is ground to a consistent size.

    A blade grinder is not as consistent as some coffee will be ground more finely than the rest. If you grind your coffee at home with a blade grinder, have it ground at the store with a burr grinder. You will be surprised at the difference!

    The size of the grind impacts the taste of your coffee. Does your coffee taste bitter? It may be over-extracted, meaning it is ground too fine.  Does your coffee tastes flat? It may be under-extracted, meaning your grind is too coarse.

    Whenever  having coffee ground to order, remember to to mention exactly how you will be brewing it. Are you using a French Press?  A flat or cone drip filter? A gold mesh filter? They will grind it specifically for your brewing preference.

    Water is very important to the quality of your coffee. Use filtered or bottled water and avoid the strong odor or tastes from additives such as chlorine.

    If you’re using tap water, let it run a few seconds before filling your coffee pot, and be sure to use cold water.     The most common guideline is called the “Golden Ratio” – one to two tablespoons of ground coffee for every six ounces of water. This can be adjusted to suit individual taste preferences.

    Check the lines or indicators on your brewer to see how they actually measure. Remember, some water is lost to evaporation in certain brewing methods.

    For optimal extraction, your brewer ideally should maintain a water temperature between 195 to 205 degrees Fahrenheit. Colder water will result in flat, under-extracted coffee, while water that is too hot will also cause a loss of quality in the taste of the coffee. (With the exception of cold brew which does not need any heat.)

    When brewing coffee manually, let the water come to a full boil, but do not over boil. Turn off the heat source and allow the water to rest a minute before pouring it over the grounds.

    Always allow your coffee – or any hot beverage – to reach a comfortable temperature before enjoying (specifically below 140 degrees Fahrenheit).

    Drip system — the contact time should be approximately 5 minutes.

    French Press — the contact time should be 2-4 minutes.

    Espresso — (especially brief brew time) —  contact time is only for 20-30 seconds.

    Cold brew — should steep overnight (about 12 hours).

    If you are not happy with the final taste of your brew, you’re likely either:

    • Over-extracting– the brew time is too long
    • Under-extracting – the brew time is too short

    Experiment with the contact time until you get your preferred taste.
